ONAOO organizes a course to train future olive oil tasters

2019/12/02 - The Organizzazione Nazionale Assaggiatori Olio di Oliva (ONAOO) has convened a technical course for future tasters of olive oil, which will be held from April 1 to 5 in Imperia (Italy).
Sponsored by Gruppo Pieralisi, the course program includes an introduction to sensory analysis and the official tasting technique, as well as training in the recognition of defects and positive attributes of the samples.

During the training activity participants will deepened their understanding sensory analysis; IOC method for the organoleptic evaluation of virgin olive oils; Chemical-physical characteristics of olive oils; Olive growing and the effects on the quality of olive oils; The influence of technology on the quality of olive oils; The legislation in the olive sector; World production and consumptions; and Control methodologies standardization.

Other topics related to the healthy role of EVOO in the diet will also be studied during the course. In the last days of the training different selective tests will take place.

Carlotta Pasetto and Marcello Scoccia, from ONAOO, will join the teachers of this course: Riccardo Gucci, from the University of Pisa; Francesco Visioli, from the University of Padua; Franco Macchiavello, from ICQRF Northwest; Conte Lanfranco, from the University of Udine; and Maurizio Servili, from the University of Perugia.
