The UJA celebrates its II International Workshop on Healthy Cooking with Virgin Olive Oil for foreign students

2017/01/12 - The School of Hospitality Cruzcampo Foundation of Jaén hosted yesterday the II International Workshop on Healthy Cooking with Virgin Olive Oil organized by the Center for Advanced Studies in Olive and Olive Oil of the University of Jaén (UJA) with the collaboration of the Provincial Council, which had the participation of thirty foreign students as part of the commemoration of the World Olive Tree Day.
At the opening of this event, the Vice Chancellor of Internationalization, Sebastián Bruque, said that during this course there are more than 1,200 foreign students from a total of 64 countries -Mexico, Brazil, Taiwan, Ecuador, Chile, Italy and Serbia, among others- that the UJA hosts through different international mobility programs, "that will become the best representatives of our province." In this sense, Bruque assured the students that, thanks to their participation in this day, "you will understand what is the value of our flagship product, virgin olive oil, and you will learn what its advantages are and how to use it in the elaboration of many dishes."

The Director of the Center for Advanced Studies in Olive and Olive Oils, Sebastián Sánchez Villasclaras, pointed out that one of the aims of this workshop is "to become ambassadors of our EVOOs in your countries of origin." For his part, José Juan Gaforio, Coordinator of this meeting, highlighted the "impact" that food has for health, "essential to stop aging, prevent different types of cardiovascular diseases or different types of cancer, with EVOO being one of the star foods in this sense."

Finally, Fernando Martínez, Teacher at the School of Hospitality, stressed that this is the first workshop of its kind held in Spain. "For us, EVOO is an important bulwark in our daily work, for the training lessons we teach and for our province. We are proud that these students carry our VOO by flag all over the world," he said.

After the inauguration, different presentations were developed by the heads of different units of the Center for Advanced Studies in Olive and Olive Oil of the UJA. Professor Antonio Molina Díaz, Head of the Analytical Chemistry Unit, gave an introduction to the characteristics and quality of virgin olive oils; José Juan Gaforio, Head of the Health Unit, spoke about the health benefits of virgin olive oil consumption; and Francisco José Torres, Head of the Marketing and Economics Unit, gave a talk on the consumption and marketing of virgin olive oil in the world. Finally, Sebastián Sánchez was in charge of teaching an initiation workshop to the tasting of virgin olive oils.

In the second part of this meeting, the foreign students of degree and postgraduate of the UJA had the opportunity to participate in a healthy cooking workshop, together with the chefs of the Cruzcampo Foundation School Hotel of Jaén, where they prepared different dishes with virgin olive oil as the main base.
